Eating Healthy with Zucchini

Eating healthy with zucchini is easier than you might think. I’ve been trying new recipes lately. And I have recently tried two recipes that I really love – both with zucchini! I’m not very good about eating vegetables, so the fact that I’m trying recipes with zucchini is pretty amazing! I’m on a quest to eat better, so eating healthy with zucchini is a win-win.

Burrito Zucchini Boats

First up, I tried these Burrito Zucchini Boats. I made them for the first time to take to a graduation party and they were a total hit! We cut each “boat” into quarters. In hindsight, I would probably add some taco seasoning to them, but hey, they were still pretty awesome!

Zucchini Grilled Cheese – Zucchini Patties

Next up were the zucchini patties. I used a recipe that I had found for Zucchini Grilled Cheese. I followed the recipe with the exception of the cheese. I chose to just make the patties and see how they tasted alone. Additionally, I didn’t have green onions so I used a white onion and I used EVOO instead of vegetable oil. Once again, a recipe that totally rocks! I would say the texture is something like a crab cake.

Tip Time

I do want to share one tip on the zucchini patties. It’s best to only make as much as you’re going to eat at that time. I made the full recipe and had 5 patties. I ate 3 patties for dinner and placed the remainder of the mixture in the fridge for next day’s lunch. While they still tasted great, the mixture was definitely more runny.
